The way we do things

At Cuore di Gelato, our philosophy is simple:
to make true artisan Italian gelato, entirely from scratch, using only natural ingredients and traditional methods.

We believe gelato should taste like what it is made from — clean, balanced, and honest. That’s why we start with fresh milk, cream, seasonal fruit, free-range eggs, and carefully selected nuts and chocolate. Wherever possible, we work with local produce and follow the seasons, allowing our flavours to change naturally throughout the year.

We do not use ready-made bases, artificial flavourings, or artificial colourants. There is no need. When ingredients are chosen properly and recipes are balanced with care, simplicity is enough.

Made with care, from the ground up

Every flavour we create is developed and produced by our team, following recipes that are carefully tested and balanced. Gelato is not just about ingredients — it is about precision.

Temperature, sugar, fat, and texture are all adjusted to achieve a result that feels smooth, light, and satisfying on the palate. Each batch is made in small quantities, allowing us to maintain consistency and attention to detail.

This approach takes more time, but it ensures that every flavour is made the way it should be.

Gelato, not ice cream

While often compared, gelato and ice cream are not the same.

Traditional Italian gelato contains less fat and less air than ice cream, resulting in a denser texture and a more direct, expressive flavour. It is served at a slightly warmer temperature, which allows the ingredients to fully develop on the palate.

The result is a dessert that feels lighter, more balanced, and easier to enjoy — especially after a meal or during a warm day.

A natural, evolving product

Because we work with real ingredients and seasonal produce, our gelato is not fixed. Flavours evolve, recipes adapt, and what we offer changes over time.

This is part of the experience.

Rather than aiming for uniformity, we aim for quality — allowing each ingredient to express itself as it should.

Our gelato is available through selected stockists and at events across the Bay of Plenty. Whether enjoyed from a tub or served fresh from our gelato cart, it is made with the same care, attention, and respect for tradition.
